Oreo Cheesecake Cookies (Guilt-free and Gluten-free)

1/2 cup light butter spread (recommended: Smart Balance Light)
4 ounces reduced fat cream cheese
1 cup Swerve sweetener
1 teaspoon vanilla extract
1 cup gluten free all-purpose flour (recommended: King Arthur)
2/3 cup gluten free chocolate sandwich cookies, crushed (recommended: Kinnikinnick)

Seriously, do I need to say why I thought this would be good? Or why it would wreak havoc on my diet of guilt free and gluten free goodness? These are delicious and you can play around and come up with different yummy cheesecake combinations! I used my favorite all-natural, zero-calorie sweetener, Swerve and delicious cookeies from Kinnikinnick to create these to die for cookies!

DIRECTIONS
Preheat the oven to 375 degrees. Line a baking sheet with a silicon mat and set aside.
In a mixing bowl, cream together butter and cream cheese on medium speed until well combined. Add the Swerve and vanilla extract and mix until all the ingredients are well combined. Add the flour and mix on low speed until it is fully incorporated.
Place the cookie crumbs in a small bowl. Scoop the cookies into about 1 1/2-2″ balls and then roll in the crumbs. Place the balls on the baking sheet and bake for 12-15 minutes, or until the edges are golden and the tops are slightly puffy. Cool in the pan for 2 minutes before transferring to a wire rack and let cool completely. Store in an airtight container.
Here’s the skinny:
First, I used lightened butter and cream cheese to cut out fat and calories.
Next, I used Swerve, an all-natural no-calorie sweetener instead of sugar.
Also, I cut out the chocolate and white chocolate chips that were in the recipe. I can’t see or taste a difference when it’s covered in Oreos. If you can’t notice the difference, don’t throw it in!
I used gluten free cookies and flour in the recipe to make them gluten free.
Lastly, by using the gluten free cookies, you’re saving fat and calories, as they are naturally lighter than regular Oreos. I also used 2/3 of what the recipe called for, adding to the savings.
