Ingredients: Serves 4-6.

3 tbsp. oil
2 cups thick rice flakes (Poha) (Poha is made from flattened rice flakes, which can be bought in thick or thin form. The thick form does not get mushy and is perfect for this dish.)
½ cup roasted peanuts (you can substitute cashews)
2 cups thinly chopped white onion
1 cup peas
¼ cup chopped cilantro
1 tsp. chaat masala
2 tsp. salt
1 tsp. turmeric
1 tsp. mustard seeds
¼ tsp. red chilli powder
½ tsp. garam masala
1 tbsp. grated ginger
15 curry leaves
½ of a lemon

Assembly:

Wash poha by placing in strainer and running under water for approximately two minutes (or until slightly soft).
Heat oil in pan on medium heat.
Add mustard seeds and onion and cook until onions are a light brown.
Add ginger and cook for about one minute.
Add curry leaves. Mix well.
Add peas. Mix well.
Add peanuts. Mix well.
Add chaat masala, salt, turmeric, garam masala, and red chilli powder.
Add poha and ¼ cup water.* Mix well and cook for 3-5 minutes. (Note: Do not add all the water at once. Add little by little and only enough so the poha is not dry.)
Squeeze lemon over poha. Mix well.
Garnish with cilantro.

Serving suggestions:

Serve with garam (hot) chai.
