Turkey on the Green Egg (GE) - large size - smoke then cook

Green Egg Preparation:

1. Clean GE thoroughly to ensure proper function.
2. Use natural wood charcoal only. Briquettes are not acceptable..
3. Fill the GE to the top of the lower core ring.
4. Soak apple wood chips overnight in bowl.

Cooking:
1. Light the charcoal. Allow about 30 minutes for fuel to heat to at least 500 degrees.
2. Make room in the center of the charcoal for the wood chips.
3. Carefully place wood chips in the center of the charcoal.
4. Place soaked wood chips in the center of the charcoal. One bag is appropriate.
5. Place deflector on top of the lower core ring.
6. Place the pizza stone on top of the deflector.

Turkey preparation:
1. See Suzanne's turkey recipe prep for proper turkey prep.
2. Turkey cannot be bigger than 16 pounds for large size GE.

Cooking instructions:
1. Place turkey in two oval aluminum silver pans.
2. Smoke turkey for one hour at 150 to 200 degrees.
3. Smoke chips will be depleted after one hour.
4. Cook turkey for three hours at 300 degrees.
5. Congratulations! Your turkey is now ready to eat!!
