Serves 4-6
Ingredients:
2 lbs. fingerling potatoes ( small) if larger cut into 1/4 or 1/2'sto make bite size pieces
2-3 T extra virgin olive oil
1/2 t sea salt
1 t dried thyme
Technique:
preheat the oven to 375 F
line a sheet pan with parchment paper
wash & clean potatoes under cold water
place in a large bowl & pat dry with towels
add 1-2 T oil to potatoes in a bowl
toss potatoes to coat with oil
ensure that potatoes are just covered adding more oil as needed
add salt & herbs, tossing to coat
place potatoes on prepared sheet pan
bake in oven until golden & knife tender, 30-40 minutes.
