Grilled Flank Steak

chef notes:
we recommend that the flank steak be cooked to no more than medium, as it is a tougher cut of meat ( no more than 130-140) - it will also carry ove crook once removed from the grill & it rests.

Serves 4-6
Ingredients:
2-3 lb flank steak
2-3 T garlic grapeseed oil
2 t dried thyme
1 t dry mustard
1 t black pepper, freshly ground
1 t chili powder
1/2 t smoky paprika
1/2 t ground coriander
1/2 t ground cumin
sea salt

Technique:
brush steak with oil
mix dried herbs & spices in a small bowl
rub steaks with herb mixture
place steaks in a resealable bag and marinate in fridge for 1-8 hrs

To Grill:
preheat grill pan or grill until very hot
season steak with salt
grill steak until sear is created, 4-6 minutes
flip & grill until desired doneness
remove & let rest on a plate for 5-10 minutes
slice & serve hot
