Spruced-Up Vanilla Cake

I usually serve this cake in thing slices with a bowl of mixes berries, such as strawberries, blackberries and blueberries. You can add whip cream as well.

Ingredients:

2 sticks softened butter
1 1/2 cups sugar
6 eggs
2 1/3 cups flour
1/2 tsp baking soda
1 cup plain fat-free yogurt
4 tsp vanilla extract (1 TBSP +1 tsp)

1 to 2 tbs confectioners' sugar, for dusting cake after cooled



Preheat oven to 350. Place a baking tray in oven to heat as well.

Grease a 4 1/2 pint bundt tin (I use a fir tree shaped one) very liberally with butter or shortening.

Nigella does a version of this where she just dumps everything into a food processor and mixes it all together. I've tried that and it works great. Plus, it is easy!

Bake for 45 to 60 minutes, checking after 45 minutes by putting a metal skewer into cake. If it comes out clean, it is cooked.

let cook on a rack for 15 minutes. Gently pull edges of the cake from the pan and then carefully turn out the cake onto a wire rack. Leave to cool completely.

Once cool, sieve the icing sugar over the cake.
