2 tablespoons olive oil
6 ounces (2/3 cup) diced tasso ham*
Kernels scraped from 4 ears of corn
2/3 cup chopped yellow onions
2 tablespoons minced garlic
1-1/2 teaspoons kosher salt
3 turns freshly ground black pepper
2 cups whipping cream
2/3 cup minced red bell pepper
2/3 cup chopped green onions


Heat the oil in a deep skillet. Saute the tasso for 30 seconds in the hot oil. Add the corn, shake and stir it in the pan for 1 minute. Add the onions and cook for 30 seconds. Add the garlic, salt, and pepper and cook 1 minute more. Stir in the cream, bell pepper and green onions and bring to a simmer. Cook about 2 minutes more.

* Can substitute lean, cured and smoked pork with Tabasco
