Beverly. Don't know if you remember a cook named Kitty at the Auchincloss estate - actually she worked for Mrs. Alexander. Well, this was her recipe and she worked painstakingly at making these cookies. I can still see her putting dough on a cookie sheet and then pressing out the dough in a perfect circle with her fingers. I consider that labor intensive when I can get the same results my way.
Please try these and pass the recipe along to your girls -- they get raves wherever I take them and are Phil's favorite right here in our home. Besides being good, you always have all the ingredients in the house and never have to go shopping. I have named them "Kitty's Cookies" as I don't remember what she called them. The recipe is as follows as is a photo.

KITTY'S COOKIES

Ingredients:
1/2 lb butter (2 sticks)
1 cup sugar
1 egg
2 cups flour (AP)
1 tsp. vanilla - I don't measure, just pour in a bit.


Method:
Drop a small amount (size of a nickel or dime) on parchment paper. This is a must or you will have a hard time getting nice round cookies off the baking sheet. Dip flat- bottom juice glass dipped in flour onto cookie and press out. After finishing this procedure with whole tray, run fork tines through, being careful not to go all the way through dough. Sprinkle with cinnamon and bake at 375* and when brown around the edges, remove from oven. Let cool on parchment paper and then lift and put in container with lid. Then enjoy!!!!!!!!!!!
