Easy Spinach Bites

Fig It!

Ingredients
•20 ounces package frozen spinach
•2 cups herb stuffing mix
•1 large onion, chopped
•3 eggs, well beaten
•3/4 cup reduced fat Parmesan cheese
•1/2 cup butter, melted
•3 dashes hot sauce
•1/2 teaspoon pepper
•1/2 teaspoon salt


Instructions
1.Cook spinach, drain, squeeze dry and chop fine.

2.Combine cooked spinach with stuffing mix, onion, eggs, Parmesan cheese, butter, hot sauce, salt and pepper. Chill mixture for several hours in refrigerator.

3.Shape into small bite-sized balls and freeze.

4.When ready to use, place spinach balls on cookie sheet sprayed with oil spray and lined with foil.

5.Bake at 350 degrees F for 20 minutes and serve.
