Romaine Roast Beef Wraps with Horseradish Cream

I served these lovely wraps with some grape clusters and a few baked chips.

Notes

Husband ate these rather messy wraps with a knife and fork- I ate them as served- as a "wrap". (Provide ample napkins!)

1/4 cup olive oil mayonnaise
2 teaspoons drained prepared horseradish
4 large romaine lettuce leaves, woody vein trimmed at bottom
1/2 golden delicious apple, cut into 16 slices
4 ounces reduced-fat thin-sliced Swiss cheese
12 ounces deli-sliced roast beef
1 tomato, cut into 8 slices
DIRECTIONS
Combine the mayonnaise and horseradish in a bowl.
Arrange the lettuce leaves on a work surface. Spread the center of each with one-quarter of the mayonnaise mixture. Top each with 4 apple slices, 1 slice of cheese, one-quarter of the roast beef, and 2 tomato slices. Fold each leaf around the filling and serve.
