Super Easy BBQ Shredded Pork

6 boneless center cut pork chops, 1" thick
RUB:
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon date sugar
1 tablespoon smoked paprika
1/4 teaspoon cayenne pepper
1 cup unsalted chicken stock (recommended: Kitchen Basics)
2 cups BBQ sauce (be sure to use your favorite!)
1 tablespoon reduced sodium worchestershire sauce
1 large onion sliced thick

I absolutely love BBQ pork. Once, after watching Diners, Drive-ins and Dives, I drove to Compton just because it looked so good… the lady who owned the place was hysterical. (BTW – The drive was SO worth it! YUM!) I never make it at home, however, because it’s so labor intensive. Well, I discovered a trick that makes it one of the easiest things to make ever. Peanut butter and jelly sandwiches are more labor intensive than this… well, almost, but you get my point. All you need is a slow cooker and a stand mixer and you have the simplest, most delicious BBQ pork you’ve ever tasted!

DIRECTIONS
Combine rub and massage into pork chops. Let sit on the counter top for two hours or in the refrigerator overnight. Combine stock, bbq sauce and Worcestershire sauce and let sit alongside the pork.
After the pork and sauce has finished resting, slice the onions. In a slow cooker, place half the onions on the bottom. On top of the onions, place half of the pork and pour half of the sauce over the pork, coating the chops. Repeat. Cook on low 6-8 hours until pork is easily shredded with a fork.
Remove pork and place half in the bowl of a stand mixer fitted with a paddle beater. Mix on low until pork is shredded to desired consistency. Repeat with the remaining pork. The pork will be dry – don’t worry! Add the remaining sauce, a little bit at a time, until pork is fully moistened and voila! Super easy BBQ shredded pork!
Here’s the skinny:
I used pork chops instead of a fatty pork shoulder, saving a ton of fat and calories.
Also, I reduced the sodium by using an unsalted stock and reduced sodium Worcestershire sauce.
Lastly, I cut out empty calories by using date sugar instead of brown sugar.
