Ruth Bachrach's Gefilte fish GF version

FISH BALL INGREDIENTS
2 lb. tilapia - ground
1 onion
some carrots
2 tsp salt
1 tsp pepper
2 egss
1 TBSP oil
4 TBSP GF matzo meal
1 TBSP sugar
BROTH INGREDIENTS
2 Quarts water

celery
carrots
1/2 tsp pepper
2 TBSP sugar
In large pot, combine broth ingredients. Cook over high heat while preparing the fish. When water is boiling (you can also add the head of the fish or fish bones if you so desire to the water) shape mixture into balls with moistened hands... Make sure everything is mixed well before you do this. Drop balls carefully into boiling water and cook over low heat 1.5 hours - covered loosely. Uncover for the last 1/2 hour. Let cool and remove from pot into storage dish. Save liquid and carrots. Chill it all.
