Fig It!

Ingredients:
Tomatoes, Cored, Diced 6 oz.
Cucumbers, Peeled, Diced 5 oz.
Green Peppers, Seeded, Diced 2 1/2 oz.
Red Peppers, Seeded, Diced 2 1/2 oz.
Onions, Sliced 4 oz.
Crustless White Bread, Diced 4 oz.
Tomato Juice 6 fl. oz.
Tomato Puree 1 tbsp.
Garlic Cloves, Mashed 1
Minced Jalapenos pinch
Olive Oil 1 1/4 tbsp.
White Wine Vinegar 1 1/2 tbsp.
Salt 1/2 tsp.
Ground Black Pepper 1/4 tsp.
Garlic-Flavored Croutons 1 oz.
Directions:
1. Reserve a little bit of tomato, cucumber, pepper, & onion for garnish.
2. Soak bread cubes in tomato juice.
3. Puree bread with diced veggies, tomato puree, garlic, jalapeno, olive oil, & vinegar.
4. Adjust seasoning with salt and pepper. Refrigerate.
5. Serve with garnish & croutons on side.
