4 fl oz red wine vinegar
4 fl oz balsamic vinegar
2tsp mustard
16 fl oz mild olive oil or canola oil
8 fl oz extra virgen oil or canola oil
2 tsp salt
1/2 tsp ground black pepper
3 tbsp minced herbs such as chives parsley, tarragon

1. combine the vinegars and mustard if desired

2. whisk in oil gradually

3. season with salt and pepper add fresh herbs if desired
