3 oz egg yolks
1fl oz white vinegar
1 fl oz water
2 1/4 tsp dry mustard
21 fl oz veg oil
2 1/4 tsp kosher salt
1/2 tsp groud white pepper or as needed
1 fl oz lemon juice or as needed

1. whisk yolk vinegar and mustard until slightly foamy

2. add the oil gradually in a thin stream whisking constantly until all the oil is incorporated and the mayo is thick

3. season with salt and pepper and lemon juice as needed
