Pepper Jack & Oregano Crackers

4 1/8 oz all-purpose flour
4 oz shredded pepper Jack cheese
1 t dried oregano, or 1 T fresh oregano
1/4 t salt
1/4 t ground black pepper
2 fl oz vegetable oil
2-2.5 fl oz water
Spice Mixture
1/8 t cayenne
1/2 t sugar
1/2 t kosher salt
1.Combine flour, cheese, oregano, salt, and pepper in a food processor or by hand. Add oil and mix just to a coarse meal consistency. Add water gradually until the dough forms a cohesive ball that pulls away from the sides of the bowl.
2.Divide the dough equally into pieces, wrap, and refrigerate. Combine the spice mixture ingredients; reserve.
3.Roll the dough through a pasta machine to 1/8 in thickness.
4.Cut the dough using a pizza cutter, knife, or shaped cutters into the desired cracker shapes and place on a doubled sheet pan. Sprinkle with the spice mixture.
5.Bake at 325 until lightly golden; turn and bake until medium golden brown, 15-20 minutes. (Note: Can bake as sheets of dough and break up after cooled or cut into shapes before baking.)
