Sesame Crackers

2.375 oz durum flour
2.25 oz all-purpose flour
1/8 t salt
1/2 t baking powder
.75 fl oz EVOO
4 fl oz water
1.5 lg egg whites
2.5 oz sesame seeds
1.5 T kosher salt

1.Preheat oven to 350.

2.Combine flour, salt, and baking powder in bowl of an electric mixer and mix on medium speed until ingredients are fully combined.

3.Add oil to dry ingredients and mix until incorporated, about 1-2 minutes. Add water and mix until a pliable ball forms, about 3-5 minutes.

4.Allow dough to rest for one hour, covered, at room temp.

5.Working with about one quarter of the dough at a time, roll out the dough on a pasta machines to 1/16 inch. Be sure to dust the machine with flour periodically so that the dough doesn't stick.

6.Cut the dough into 2-in rounds or other desired shape. The dough can also be baked in sheets and then broken into crackers.

7.Brush the dough with the egg white, then sprinkle the rounds with the sesame seeds and salt.

8.Bake the crackers in preheated oven until light golden brown, about 5 minutes.

9.Store crackers between layers of absorbent paper towels in an airtight container for up to 3 days.
