Curried Chicken Canapes
Bread, thinly sliced - as needed
Chicken Curry Spread (recipe follows) - as needed
Vegetable garnishes - as needed
1.Toast the bread lightly. Top with a smooth, even layer of Chicken Curry Spread.
2.Cut the bread into the desired shapes, such as squares, circles or diamonds, being sure to wipe the knife blade clean after each cut. Garnish each canape as desired.
Chicken Curry Spread
Yield: 25 servings
1 lb chicken breasts, boneless, skinless, cooked
4 fl oz cream of coconut
4 fl oz mayonnaise
1.5 T curry powder
1 T lemon juice

1.Cut chicken into small pieces and place in a food processor. Pulse until a fine texture is obtained.
2.Add remaining ingredients and mix until blended. Refrigerate until needed, but use within 2 days.
*Poach the chicken breast.
