Apricot Cobbler

This cobbler can be made into individual cobblers, bake in small ramekins. A mint garnish and vanilla ice-cream adds a great finish!

This recipe has been adapted from the King Arthur Flour Baking Companion

Ingredients:
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon Kosher salt
2 eggs
1 cup sugar
2 Tablespoons butter, soft
2 Tablespoons milk
1/4 cup sugar
1/8 teaspoon cinnamon
3 cup sliced Apricots
Method:
1. Preheat the oven to 375
2. Grease a 8 inch round cake pan.
3. Combine, flour, baking powder and salt in a medium bowl, set aside.
4. Using a whisk or an electric mixer, beat eggs and sugar until thick and pale yellow.
5. Whisk in butter and milk.
6. Add the flour mixture, and mix until combined. do not over mix or the cobbler will be tough.
7. Add batter to the greased pan.
8. Combine sliced apricots with 1/2 cup sugar and cinnamon.
9. Gently spoon sugared fruit over the batter in the cake pan.
10. Bake for 30 minutes or until golden brown.
