CUL225 WEEK 7
6 packets of gelatin (1.5 oz. total)
add cold water to gelatin in bowl to bloom (about 1 cup)
(can sit at this point)
add 1 pint hot stock to dissolve gelatin
pour aspic on platter - allow to set slightly
add garnishes
blanch and shock first so they are pliable and lie flat
keep garnishes flat and thin
add rest of aspic over garnishes
garnishes will move - reset
always work with aspic when warm
chill
use as platter for serving
