Chilled Cantaloupe Melon & Champagne

Ingredients:
White Wine 16 fl. oz.
Sugar 8 oz.
Lime Juice 2 fl. oz.
Midori Liquor 1 Tbsp.
Lime Zest 1/2 tsp.
Cantaloupe Melon, diced 1/2
Orange Juice 3-4 fl. oz.
Cornstarch 1 Tbsp.
Champagne 2 fl. oz.
Lemon Juice 1 1/2 fl. oz.
Sparkling Water 24 fl. oz.
Orange Zest 1 Tbsp.
Lemon Zest 1 Tbsp.
Sugar 2 1/2 oz.
Small Melon Bals 6 oz.
Directions:
1. For Granite: Combine all ingredients in a shallow pan for 3 hrs. stirring every 30 minutes with fork until slushy consistency.
2. For Soup: Puree the diced melon & fresh orange juice in a blender on medium speed until smooth. Refrigerate.
3. Make a cornstarch slurry with 1/2 fl. oz. Champagne.
4. Bring lemon juice, sparkling water, and orange and lemon zests to a boil in a small saucepan and thicken with a slurry. Chill.
5. Add melon puree and adjust seasoning with sugar and lemon
6. Add Champagne
7. Serve with lime granite in a soup. Garnish with melon balls.
