Ingredients:
Marinated Tomatoes 2 lb. 8 oz.
Mozzarella Cheese 2 lb.
Red Tomato 1
Yellow Tomato 1
Basil Chiffonade 3 Tbsp.
Directions:
1. Prepare the tomato salad and reserve until ready to assemble appetizer
2. Cut the mozzarella into slices 1/4 in thick Reserve
3. Cut the tomatoes into 1/4 in thick and halve slices Reserve
4. Appetizer Assembly: For each serving mound tomato salad on a chilled plate. Arrange 3oz. sliced mozzarella and several slices of tomatoes around tomato salad. Scatter basil and chiffonade over plate.
