Fig It!

Ingredients:
Butter 1 1/4 oz.
Minced Shallots 2 1/2 oz.
Minced Garlic 2 1/2 Tbsp
Spinach, cleaned and stems removed 15 oz
Nutmeg 1 1/4 tsp.
Chopped Dill 1 1/4 tsp.
Fetta Cheese, crumbled 7 1/2 oz.
Mozzarella Cheese 2 1/2 oz.
Salt 1 1/4 tsp.
Ground Black Pepper pinch
Phyllo Sheets 15
Butter, melted 10 oz.
Directions:
1. Melt butter in saute pan over moderate heat. Add the shallots and garlic to the butter and sweat until translucent
2. Add spinach, nutmeg, and dill and saute gently until wilted. Transfer the spinach mixture to a bowl and allow to cool. Add cheeses and season with salt and pepper.
3. Lay one sheet of phyllo dough on a cutting board and brush with melted butter. Repeat 3 times
4. Cut the phyllo dough lengthwise into 6 even strips. Place 1 oz spinach in bottom right corner fold from bottom left to make a triangle. Repeat.
6. Place phyllo triangles on sheet pan and brush with melted butter
7. Bake in 400F oven until golden brown apx: 15 minutes
