Fig It!

1 lb chicken breasts, boneless, skinless, cooked
4 fl oz cream of coconut
4 fl oz mayonnaise
1.5 T curry powder
1 T lemon juice
TT SP

1.Cut chicken into small pieces and place in a food processor. Pulse until a fine texture is obtained.
2.Add remaining ingredients and mix until blended. Refrigerate until needed, but use within 2 days.

*Poach the chicken breast.
