Broccoli Cornbread

Ingredients:
1 box Jiffy cornbread mix
1(10oz.) pkg. frozen chopped broccoli (or spinach)
1 stick margarine, melted
1/2 cup onion, finely chopped
1 cup cottage cheese
3 eggs beaten

Method:
1. Cook broccoli (or spinach) according to directions on the box.
2. Drain the broccoli well.
3. In a separate bowl, beat eggs and add onion, margarine, cornbread mix and cottage cheese.
4. Add well drained broccoli (or spinach).
5. Mix well.
6. Pour into a buttered 12x7-inch baking dish. or prepared muffin pans.
7. Bake at 350 for 25 to 30 minutes until light brown on top.
8. Bake longer if center seems a bit soft.
9. Allow to rest for 5 to 10 minutes.
