INGREDIENTS

6 pieces of chicken

2 Mrs Grass's chicken noodle soup flavor packets and golden nuggets

1 onion minced

8 oz.. thinly sliced mushrooms

1 1/4 lb. ground sirloin

2 cups arboriorice

1 cup grated Pecorino Romano cheese

DIRECTIONS

Bring chicken to a boil in a large pot of water. Skim scum. Add flavor packets and nuggets and simmer for 30-40 minutes until chicken is cooked. Add salt and pepper to taste.

Heat 1 T butter and 1 T olive oil in a large Dutch oven, add mushrooms, season with salt and pepper and cook until just beginning to turn brown. Remove.

Saute onions until soft and just beginning to brown . Add a little oil if necessary. Add ground meat and cook until no longer pink. Add mushrooms and stir to combine. Deglaze with a little white wine. When wine is reduced by half, fill pot halfway with chicken stock. Add rice and bring to a boil. Simmer rice until cooked, adding stock as necessary.
Add stock to desired consistency. Remove from heat and add cheese.
Serve with chicken if desired, or save it for another use.
