Fresh Roasted Tomato Pasta Sauce

INGREDIENTS

Extra Virgin Olive Oil
4-5 large tomatoes in season
Salt and pepper
5-10 large basil leaves
3/4 cup fresh bread crumbs
1/4 grated Pecorino Romano cheese
1 Lb. Rotini or Penne pasta

DIRECTIONS

Heat oven to 350 degrees.

Coat a 13 by 9 inch baking dish with oil.
Cut tomatoes into 1 inch pieces and put in baking dish. Season them with salt and pepper. Add 3 T olive oil and mix to combine. Julienne basil and scatter over top. Mix bread crumbs and cheese and scatter over top. Bake 30-35 minutes until tomatoes are soft and cooked.

Cook pasta in large pot of boiling salted water. When cooked add to baking dish with tomatoes and combine. Serve with cheese.
