For the cabbage:
3 ea. heads napa cabbage
Cut ends off 3 heads of Napa Cabbage.
Cut the cabbage in ¼ths lengthwise and cut each ¼ into 1in pieces.
Coat cabbage evenly with very thin layer of salt. Allow cabbage to sit for 2 hours.
After 2 hours rinse cabbage very well 3 times and allow to drain for 10 minutes.
Squeeze all water out of the cabbage before marinating
Kimchi Marinade
Yield: 1 qt
4 oz Minced garlic
4 oz Minced ginger
2 oz Fennel seeds
8 oz Fish sauce
6 oz Sesame oil
6 oz Korean Chili flakes
Combine all ingredients together and add to Napa Cabbage
