Ingredients:
1 Pint Heirloom Cherry Tomatoes, Halved
1 Seedless Watermelon cut into Chunks
Handful of Fresh Torn Basil
Handful of Fresh Arugula, Optional
Balsamic Glaze
Extra Virgin Olive Oil
Fresh Cracked Pepper
Maldon Sea Salt Flakes
Balsamic Glaze
Cook equal parts balsamic vinegar and brown sugar until reduced and syrupy. Set aside to cool.
Method:
To assemble, toss together cherry tomatoes and watermelon. Arrange on a platter and sprinkle on basil and arugula. Drizzle with balsamic glaze and extra virgin olive oil. Top with fresh ground pepper and sea salt flakes to taste. This is great on its own or with grilled chicken. Enjoy!
