Coconut is usually sparingly used. Not this recipe, this is full out on the white stuff. Refreshing as a topping for meat or vegetables. Or serve as a dip for those fresh-cut carrot/celery/broccoli plates so popular at buffets.
Ingredients:
1/2 cup plain yogurt
3 tbs finely chopped cilantro
2 tbs finely chopped jalapeño pepper
1 cup Groovy coconut, shredded*
1/2 tsp salt
1/4 tsp pepper
2 tbs fresh coconut water**
Directions:
1. In a large bowl, combine all ingredients.
2. Refrigerate up to 2 days.
Makes: 1 1/2 cup
Prep time: 20 minutes (excludes coconut preparation and baking time)
