Oven Dried Cherry Tomatoes

These tomatoes provide an intense tomato flavor:
As an appetizer with cheese, grilled bread and buckwheat honey.
In a salad.
Tossed with hot pasta, arugula, goat cheese, chili peppers and extra virgin olive oil.
On a sandwich with fig vinegar, chopped fresh herbs and a drizzle of olive oil.

Ingredients:
2 lbs. cherry tomatoes
3 Tablespoons olive oil
1 teaspoon Kosher salt
1 teaspoon sugar

Method:
Preheat oven to 200 Convection or 175 Bake
1. Place cherry tomatoes on a baking sheet, (silicone liners are helpful).
2. Combine sugar and salt.
3. Drizzle tomatoes with olive oil, sprinkle with salt/sugar mixture.
4. Place baking sheet in preheated oven and cook for 1 1/2 hrs.
5. Allow to cool.
