Serve with Cilantro Marinated Chicken, fresh garden tomatoes, with Soba noodles and grilled seafood, or just use a condiment.

Fig It!

Ingredients:

2 oz. (about 4 cups loosely packed) basil leaves, fresh
1/2 oz. (about 1 cup loosely packed) mint leaves, fresh
6 oz. (1 cup) peanuts, roasted unsalted
3 cloves fresh garlic, minced
1 Tablespoon ginger, grated fresh
1 ea. lime juice, fresh
3/4 teaspoon Kosher salt
2 teaspoons Siracchi sauce
1/3 cup peanut oil

Method:
1. Place all of the above ingredients in a Cuisinart food processor or use a hand held wand blender (if you use the wand you may have to add a bit more peanut oil)
2. Process to a smooth paste.
3. Serve room temp or cold.
** I bought peanuts that had not been roasted at the Asian food store and roasted them in a 350 oven for 10 minutes.
