How to Measure Brown Sugar

Yield: 6 dozen
Ingredients:
2 cups flour, all purpose
2 cups oats, rolled (not instant)
1 teaspoon baking soda
1 teaspoon salt, Kosher
1 teaspoon cinnamon
2 sticks butter, unsalted, room temperature
1 1/2 cup light brown sugar
2 eggs, large, room temperature
2.5 teaspoons vanilla extract, pure
1 cup cherries, dried sweetened sour
12 oz bittersweet chocolate chips, high quality

Method:
Preheat the oven to 325ºF Convection or 350ºF Bake
1. In a medium bowl combine flour, oats, baking soda, salt, and cinnamon.
2. In a the bowl of an electric mixer beat butter until light and fluffy, Scrape down the sides of the bowl and beat again for 30 seconds.
3. Add the brown sugar and vanilla beat until light and fluffy again. Scrape down the sides of the bowl and beat again for 30 seconds.


4. Add the flour mixture, cherries, and chocolate chips, mix until well combined. Do not over mix or your cookies will be tough.
5. Using a teaspoon or a 1-1/2 oz ice cream/cookie dough scoop, the dough onto a parchment lined baking sheet.
7. Bake the cookies for 12 minutes, rotating the pan at 6 minutes.
8. Remove the cookies an cool on a baking rack, until cooled all the way through.
