Peanut Butter Cookies

1 Cup Peanut Butter
1 Cup Sugar
1 Teaspoon Baking Soda
1 Egg

Preheat the oven to 350 F.
Use a light colored, ungreased pan, parchment paper optional.
In a medium bowl, combine the peanut butter and sugar, mix well.
Then add in the baking soda, make sure to sprinkle it evenly so it doesn't end up clumped into one part of the dough.
Lastly add the egg and mix it in until it is fully incorporated with the dough.
After adding the egg the dough should be thick enough to roll into balls using your hands, but if it initially too thin, let it sit 5-10 minutes for it to thicken.
Depending on how big you make your cookies, you will need to put them in the oven for 9-13 minutes. Start with 9 and keep checking from there.
The cookies will be done when you press them with a finger and they have a slight resistance, but they will still feel doughy.
Do not bake them past this stage, as when they cool they will be very crumbly and dry.
Let them cool so when you pick them up they don't break.
These are a good base recipe, you can easily drizzle chocolate on top, or spread nutella in between two and make a sandwich.
