Serves 4
Ingredients:
1 head Bibb lettuce, washed and spun dry
1 head Belgium endive, washed and spun dry
1/2 bulb fennel, sliced thinly
6 cherry tomatoes, halved
1 Clementine, peeled, halved, and sliced thin across the segments
Sherry Vinaigrette:
3 Tablespoons olive oil, extra virgin
1 Tablespoon sherry vinegar, from Spain
1/4 teaspoon sugar
1/4 teaspoon salt, Kosher
pepper, black, fresh ground
Method:
1. Combine the sherry vinaigrette ingredients in a small bowl, whisk well.
2. Combine the Bibb lettuce, Belgium endive, fennel, tomatoes, and Clementine in a medium bowl. Toss with the salad dressing. Add a touch more black pepper, serve.
