Ingredients:
1 recipe Salty Fig's savory cornmeal pancakes
1 avocado, sliced in 24 thin slices
1 pork tenderloin, Salty Fig's Guajillo Marinated, sliced into 24 slices
1 cup Salty Fig's tomatillo salsa
1/4 cup cilantro, chopped fine
sea salt
extra virgin olive oil
1 lime, sliced into 24 thin slices
2 Tablespoons pumpkin seeds, toasted
3 Tablespoons sour cream
Method:
1. Assemble the Cornmeal Pancakes with Guajillo Pork: Pancake, avocado slice, pork tenderloin slice, a dollop of tomatillo salsa, a sprinkle of cilantro, a sprinkle of sea salt, a drizzle of olive oil.
2. Garnish with a thin lime slice, toasted pumpkin seeds and sour cream, if desired.
