Serving suggestions

We like to serve this with warm bread instead of butter at dinner or lunch. It is also terrific with a poached egg for breakfast. It's a variable condiment, similar to guacamole but without the garlic and spice, the perfect unassuming guest to your meal.

Yield: serves 4

Ingredients:

1 Avocado, ripe

1/8 teaspoon salt, Kosher

1 teaspoon lemon juice, fresh

1 teaspoon olive oil, extra virgin

Method:

1. Scoop the avocado into a mortar and pestle, discarding the pit and peel. You can also use a fork and bowl.

2. Add the salt, lemon juice and olive oil.

3. Mix together until smooth.

4. Adjust the salt, as some avocados are larger than others.
