Apple Cider and Buttermilk Brine

We use the Salty Fig Spice Rub for Turkey made of smoked paprika, oregano, lemon, and garlic spice rub on the turkey before we smoke it on a Green Egg.

Ingredients for the Brine:

2 quarts cups apple cider, fresh

2 quarts buttermilk, organic

8 cloves garlic, crushed

6 bay leaves, fresh

1/2 cup salt

1/2 cup sugar

1/4 cup oregano, Greek

black pepper, fresh ground

Method for Brining (1-2 days in advance):

1. Combine 2 cups cider with salt and sugar, heat on the stove to dissolve. Allow to cool. Combine this mixture with the remaining cider and other ingredients in a large container that will contain the Turkey plus the brine. I use a stock pot.

2. Place the turkey int he brine. It will not completely cover your bird, flip the bird every 6-8 hours.

3. Allow to brine for 1-2 days in advance of roasting.

4. Drain and pat dry.
