This savory summer jam is packed full of flavor, serve it up with grilled poultry or pork. It is a great side with Salty Fig's Bourbon Honey Butter and some warm crusty bread. A few spoonfuls will zip up a basic salad dressing. Sometimes we add a handful of fresh sour cherries from Michigan into the simmering jam too1 just make sure they are pitted.

Yield: 2 cups
Ingredients:
2lbs. summer strawberries, hulled and sliced
1 cup sugar
1/2 teaspoon salt, Kosher
1/4 cup balsamic vinegar
Garnish:
2 tablespoons, mint, fresh, chopped
2 tablespoons, basil, fresh chopped
Method:
1. Combine the strawberries, sugar, salt, and vinegar to a simmer.
2. Simmer for 20 minutes, skimming the brown foam off the top with a ladle every 5 minutes.
3. Remove jam form the tsove and chill to room temperature.
4. Add the mint and basil as a garnish, before serving.
