The sweet tangy flavor of pineapple is condensed and made intense in the drying process. we toss it in salads and salsas for a super punch of flavor. It adds a punch to cocktails too! Try it with some Tito's. Try Salty Fig's Watermelon, Pineapple & Grilled Corn Salad.

Yield: 2 cups pineapple slices
Ingredients:
1 whole ripe pineapple
Method:
Preheat oven to 225ºF Bake 200ºF Convection
1. Slice the ends off the pineapple. Sit he pineapple on one end, using a large knife, cut from the top fo the pineapple to the bottom at a slight curve around the edges, trimming the skin off the pineapple.
2. Cut the pineapple into quarters, lengthwise. Trim the core out of each quarter by slicing the core out lengthwise.
3. Cut each quarter in half lengthwise and then each eighth into thins slices.
4. Place the slices on a Silpat or parchment-lined sheet pan.
5. Place the pineapple in the preheated oven for 1 1/2 hours until it has begun just begun to dry. Cool to room temperature and store in the fridge.
