From Salty Fig

Ingredients:
8 cups watermelon sliced
5 ears of summer sweet corn, grilled with the husk on until slightly charred.
1 recipe Salty Fig's Oven Roasted Pineapple
4 limes, fresh juice
1/3 cup fresh mint, chopped
1/3 cup fresh basil, chopped
1 teaspoon salt, Kosher
Method:
1. Shuck the corn and cut the corn kernels off the grilled corn.
2. Combine all the above ingredients.
3. Taste to see if the salad needs a touch more lime and/or salt. It always depends on the sweetness of the watermelon and corn.
