Mom's Mac & Cheese

2 tablespoons butter

2 cups milk (preferable whole or low fat) Skim is fine but cheese does not bind as well. 

1 tablespoon flour

2 cups sharp cheddar cheese

8 oz. pasta (any shape you like, macaroni, rigatoni, penne...)

Italian herb seasoning

Panko bread crumbs

Melt butter in skillet.  While butter is melting, whisk flour into container with milk.  

Pour milk into warm skillet with butter.  Stir combination on medium to low heat until spoon gets coated.  This means the sauce is thickening.  

Cook pasta according to pkg. directions. 

Add 1 3/4 cups of the cheese gradually to the milk mixture over low heat.  Stir unitl melted.  

Add the cooked pasta to cheese mixture.  Grease a 1.5 quart casserole dish.  Pour noodle and cheese into dish.  

Sprinkle remaining cheese, panko bread crumbs and Italian seasoning on top. 

Bake at 325 degrees for about 25 minutes until warm and bubbly.
