Cinnamon Pears

This tasty dish is perfect to serve with breakfast, as a topping for pancakes or waffles or on top of vanilla ice cream.  I like to make these pears on a cool fall day when we are having eggs for breakfast and want something slightly sweet with our eggs.  Today I made the pears to serve with a ham, butternut squash and spinach omelet.

Serves 4 as a side dish

2 almost ripe Bosc pears
1/2 teaspoon apple pie spice or ground cinnamon
1 Tablespoon brown sugar
1 teaspoon maple syrup
spray oil

Core and cube the pears into bite size pieces.   Spray a skillet with spray oil and saute pears over medium heat for 10 minutes.  Stir occasionally so the pears don’t burn.
In a small bowl combine the apple pie spice (I use Penzey’s brand), brown sugar and maple syrup.  Once combined, pour over the pears and stir.  Allow to heat through, approximately 2 minutes.

Serve as a side dish, over pancakes/waffles, or over vanilla ice cream.
