Coriander Chicken

SERVES 3-4

1 small (3-4 lb) chicken, cut into pieces
1 tbsp butter
4 tbsp olive oil
4 large cloves of garlic, crushed
1 tsp turmeric (or saffron)
sald and freshly ground black pepper to taste
1 sprig of fresh cilantro, finely chopped (or 2 tsp ground coriander)
1 cup (or more) water
1/4 lb purple olives, pitted
1 lemon, sliced

Brown the chicken in butter and oil in a large heavy skillet over medium heat. Add garlic, turmeric, salt, pepper and cilantro. Cook about 10 minutes, Brushing chicken occasionally to distribute sauce evenly. Stir in enough water to cover (about 1 cup), and simmer over low heat until the chicken is tenet, adding more water if necessary.

Add olives and lemon slices, and cook 8-10 more minutes, or until sauce is reduced.
