2 ears of corn, shucked
1 can black beans, drained and rinsed
1 red bell pepper, diced
1 avocado, diced
1 tablespoon minced cilantro
2 tablespoons extra-virgin olive oil
1 tablespoon lime juice
salt and pepper
Cut kernels from corn cobs In a medium bowl, combine all ingredients. Refrigerate until serving.
