Breakfast Pizza (Guilt-free and Gluten-free)

Fig It!

GF cooking spray
1/4 pound extra lean ground turkey
1/4 pound lean ground pork
1 1/2 teaspoons breakfast sausage seasoning blend (recommended: Savory Spice Shop)
1 cup egg substitute
2 (8-inch) GF pizza crusts (recommended: Udi’s)
1 1/2 cups shredded mozzarella cheese
15 grape tomatoes, halved
2 teaspoons grated Parmesan
1 teaspoon Italian seasoning

DIRECTIONS
Preheat oven to 375 degrees.
Combine turkey, pork and sausage seasoning. Spray a small nonstick skillet with cooking spray and add meat mixture. Cook until just cooked through and set aside, about 5 minutes. Spray again and add egg substitute. Cook all the way through.
Spray pizzas with cooking spray. Top with mozzarella cheese, then eggs, sausage, tomatoes, parmesan and finish with Italian seasoning.
Bake in preheated oven for about 8 minutes or until cheese is melted.
Here’s the skinny:
First, I used cooking spray instead of butter and oil, cutting out unnecessary fat, calories and cholesterol.
Next, I made my own sausage meat. All we really look for in sausage is the spices, so why add all the fat if you don’t have to? Plus, I used half turkey and half pork to get the pork flavor but to cut down on even more fat, calories and cholesterol.
Also, I used less cheese than Sandra calls for. You really don’t need it. I use a full fat mozzarella, but less of it, so you are still saving fat and calories.
Lastly, to make it gluten free, I used a store bought gluten free crust (I used Udi’s brand crusts).
