Thai Pineapple Fried Rice with Chicken

Ingredients

1/ 2 pound or 250 grams chicken fillet, cut slices

1 medium size pineapple

1.7 ounces or 50 grams dried raisins

1.7 ounces or 50 grams roasted cashew nuts

1.5 ounces or 300 grams cooked rice, preferably long grain jasmine rice

2 tablespoon coriander leaves, chopped finely

Additional 1 tablespoon coriander leaves, chopped finely

150 grams pineapple flesh (from the pineapple) cut into small cubes

Saffron powder

1 tablespoon sugar

1 tablespoon light soya sauce

2 tablespoon thai fish sauce

4 tablespoon coconut milk

a bunch of chopped coriander for dressing

Sunflower oil

Directions

It was one of those days when I thought of combining fresh fruits and rice but yet I had little time to prepare a whole set of dishes for my guests. My guests were not really into spicy food so I came up with my version of Thai Pineapple Fried Rice and fold saffron in it resulting in a rich brilliant flavoured rice. Went out to buy fresh ingredients and I managed to cook under 50 mins.

Method:

Cook your rice and set aside.

Half the pineapple and scoop out 1/2 of the pineapple flesh out and cut into small cubes for cooking.

In a wok, add a few tablespoon of oil. When oil is hot , add chicken and stir fry on high temperature.

Add fish sauce,light soya sauce, 2 tablespoon coriander,coconut milk,white pepper,sugar and simmer on low fire with a lid on.

Check the chicken if it’s cooked. Once the chicken is cooked, add cashew nuts,raisins, 1 tablespoon coriander and rice. Mix well.

In a small bowl, prepare your saffron powder by adding with a little water.

Fold the saffron with the rice by pouring the saffron water slowly on different parts of the rice. Mix well until all the rice are light yellow in colour.

Once done, serve the rice on one half of the pineapple.

Serve warm.
