RIB SEASONING:

¼ cup sugar

2 Tablespoons Kosher salt

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon oregano

PREPARE RIBS

Heat oven to 275 degrees F.

If the ribs still have the thin membrane covering the back of the rack, remove it.

Season both sides of the ribs with Rib seasoning.

Place each half of the rack in an aluminum foil packet with 2Tablespoons for apple juice.

Cook for , 3 1/2 to 4 hours unitl the meat is tender.

MAKE BARBECUE SAUCE

Combine: 2 cups Bone Sucking Sauce with 1 cup Sweet Baby Rays

TO FINISH

Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce.

Grill Ribs on medium just until the BBQ sauce begins to carmelize on the ribs.

Garnish with sliced scallions and cilantro
