HOMEMADE BANANA PUDDING

3 1/2 T. all-purpose flour

1 1/2 cups sugar

1/4 tsp. salt

3 cups milk

3 egg yolks, beaten

1 tsp. vanilla

5 or 6 bananas, sliced

homemade vanilla wafers

3 egg whites, beaten until stiff

1 tsp. vanilla

1/4 cup sugar

Mix flour, sugar, salt in saucepan.
Combine beaten egg yolks, milk. Stir to mix well.
Add flour mixture, mix until well blended.
Cook over medium heat, stirring constantly until smooth, thickened.
Remove from heat, add 1 tsp. of vanilla.
Place a layer of vanilla wafers in bottom of a large casserole dish. Add sliced bananas over wafers.
Top with cooked custard mixture.
Repeat layers as needed.
Beat egg whites lightly, gradually add 1/4 cup sugar.
Beat until stiff. Add 1 tsp. vanilla.
Spread meringue over pudding.
Bake at 425 until golden brown.

HOMEMADE VANILLA WAFERS:

1/2 cup butter

1 cup sugar

1 egg

1/3 cups cream

1 tsp. vanilla

1/2 tsp. salt

2 cups all-purpose flour

2 tsp. baking powder

Cream butter, sugar together, mix in egg, cream, beat until well blended. Add in rest of ingredients, mix lightly. Drop small portions of soft dough onto a greased baking sheet. Flatten tops of wafers with back of a spoon, bake 8 minutes at 350. Remove from oven, allow to cool.
